I don't know for certain Spencer, but I'd say you have a scroll inside, the same as your Taylor chuck, but the centre of it is tapped to the thread of the collet. As you turn the key, you rotate the scroll and draw the collet into the closer.
Don't get confused here, you have two items that are not related to the chuck. The square block and the hexagonal block are nothing to do with the chuck. They are collet blocks for 5c collets. These are simply a method to hold round bar (and hex, square and other special shapes if required) For milling flats, shapes, hex on round etc cross holes at set angles etc etc. They are nothing to do with turning.

Yes I do ask a lot of questions. I do Google a lot to. Some stuff is new to me. I have just googled c5 collet blocks. Understand now what they are and used for.Don't get confused here, you have two items that are not related to the chuck. It's actually a Very good thing you ask on here rather than relying on being a YouTube Engineer. For people in the trade it's actually very, very sad to see the Uk's engineering being totally watered down by all the American videos. All the trades Terminology is now replaced by silly American sayings, and often the info is not very good, it makes me want to vomit to see whats happening to our valuable trades. Sadly the cat is out of the bag and our future is now YouTube Engineers and they are very easy to spot indeed. I've helped a lot of people over the years but now I just glaze over and nod my head in disbelief and abstain... Internet Engineers are far more powerful than the likes of I and the others in the trade.
Anyway, I feel better after that!
Regarding your chuck, there are two collet types. One which are drawn from the back and those where they are clamped and from the front, this can be normally indicated by the lack of a thread on the rear of a collet, threaded types are drawn from rear and the ER type (and many others) for instance is clamped from the front and pushed into the body. In short one in pushed and one is pulled. That alone gives you a big clue how the chuck will work.
It will probably screw in or possible a split nut or something and a cam will lock it in via the Key or something very similar. Of course assuming it is a 5C collet chuck and of course it looks like you have a 5C back end ER chuck to go in the collet chuck itself.

Was looking to see if I could adapt it to fit the Mellor lathe.

If you can find a backplate to fit your lathe I think all you need to do is machine a register on it to fit the hole in the back of the chuck, then drill 3 holes of the right pcd to take the mounting studs. Mount the chuck to the backplate in the lathe with the fixing nuts just nipped up then check the runout with a dial gauge. If it's not true a few taps with a hide hammer will help, then tighten up the nuts. Suppliers like Warco and Arc sell backplates. The collet blocks are very useful for milling in the lathe.

Looking more closely at the pictures, it occurs to me that the plate with the three studs is a modification. For a start, the machining doesn't seem to have been done to a good standard, compared to the surface inside which is ground. Remove it and make youself a backplate that fits the smaller register inside. You then have the three threaded holes that the countersunk screws are using for attachment.
