Don't want cheap nasty ones that last all but 5 seconds.

You need a variable speed grinder to slow it down. They will all evaporate if you use them on a normal one.

As long as you don't lean on them, ie let them do the work, they last pretty well.

May catch fire... Rated only a few hundred watts of resistive load

Amazon do a few dimmer units that may be suitable but the electrical isolation between the hot and metal casing is poor, and should be put, electircally insulated, in a grounded metal enclosure.
