After purchasing as 2nd hand flame cutting machine and looking at getting into cutting my own profiles currently I out source this process. As ive been shopping around looking for best prices on steel plate I've noticed there's quite a few different grades of steel on offer dd11 , s275, s355, 400. While I have a basic understanding that the S stands for structural and the numbers after that is the tensile strength it's gotten me interested to learn more about it. Are there any other notable differences in how they are formed etc? I've no idea what dd11 is guessing it's just bog standard like flat bar?

DD is deep drawing steel, it forms very easily. Other common grades are Dc01 (drawing steel cold rolled) and HR4. Much more common to get drawing and hot rolled grades under 3mm thick, and structural grades 3mm+, although I have been able to source s275 2mm sheet before...
Its a minefield really, unless you need a specific property of that plate, you might as well just ask for hot rolled.

It was interesting in the stuff above that it has a 'best before' date (they say use within 6 weeks), so maybe it age hardens.
Very interesting stuff I wounder what grade of steel is used I the forming or box sections and universal beams. As they would be used in structural applications? That's one thing I love about engineering u really could study it all your life and still not know everything.

A good rule of thumb is structural steel = S275 or S355. It would be an unusual/special structure not to use one of those two. Most structural steel is hot rolled. Have a look at the technical section of the website of the producer (e.g. https://britishsteel.co.uk/what-we-do/). Like me, you might not understand 80% of what is there, but you will learn a lot.

Another thing worth considering is the higher grades are normally not as easy to weld.
275 and 355 are classed as weldable and don't even need preheat unless you are working with quite thick sections.
Higher grades can be welded but care is needed to maintain the properties of the steel and to prevent cracking.
