Saw a beeb rerun (probably) of a road trip by John Torode the masterchef guy, across Argentina recently. He had a few of those barbecues on route, as I understand it they burn the logs letting the red hot clinker fall through the grids, shovel up the clinker and place under the meat grill which was on a pulley to raise/lower the meat against the heat. Looked fantastic, think they were all enclosed with the fire and cooking area covered on 3 sides.
