I would go for the 7018s as I find them a lot easier to use.
They weld in the range of 90 to 160 amps I would try them at 135 as the datasheet in the link.
Electrode positive so the earth clamp go to the negative or ac and it doesn't matter.
DC is better IMHO
Do as has been suggested on here and watch Jodie's stick welding vids and practice on some scrap first.
If it doesn't look right (and the weld in your first photo isn't) it's probably a bad weld so grind it out and start again.
It easy and satisfying to do but someone spending 5 min setting up the welder and showing you the ropes is a big help.
A Jodie vid is a very good second (and far better than been shown by a bad welder.)

What do you mean by the electrode positive? I have the ground clamp in the negative port and the rod clamp in positive. Is that backwards?
