I agree with you about epoxy. I see it as a near-miracle substance. I look forward to obtaining some of the specific branded epoxy primer mentioned in the other thread. Which specific hi build primer would you suggest?
As for the flexibility of epoxy, I have the opposite problem! My epoxy resin and hardener are a few years' old and no longer seem to fully harden, which may be good for some paint finishes but not when you're trying to build a rigid structure. My first attempt at using epoxy resin in conjunction with carbon fibre fabric can be seen in my blog (address below). The ring didn't break but it went closer to an oval than a circle. Perhaps you can buy additives which 'degrade' new epoxy to a similar extent.
