Not beech. Ash, or maple/sycamore, probably the latter as it was used in the food trade.

White Beech (Hornbeam) was used to make traditional Butchers blocks.
Maple was also used, normally over the pond in Canada and the USA.

Beech is being used more and more now, as there is a lot of it around.

A little update

I’m in Barnstaple and only bought a very limited selection of tools with me

Anyway this is it complete

The wood is Oak with whatever custom mixed wood dye I had, finished with wax.

Handles and brass pins all glued together with pound shop epoxy. I forgot to bring stuff from home and it’s all she had. I did a test pic first and it’s good.

I’m happy with this as I’ve saved something from he scrap pile. But there is room for improved technique next time. Here I finished timber to size and then drilled and fitted pins. This gave no room for manoeuvre when finishing the brass.

If there is a next time I’ll fit pins in the roughed out handle shape so they get treated with progressively finer abrasive for a better finish.

For my first attempt, I’m happy

Just need to find a woolly mammoth, dinosaur or bison so I can “test” it out

These beauties live 2 miles from me. When they slaughtered one of the bulls last year he was 6'8" to his shoulder. The meat is fantastic, very low cholesterol.

It’s as sharp as I can get it here. At home I can give it a razor edge if required. The steels lovely
