How about one of these, designed for the job and not complicated and you can run up a plank into a truck or skip.
I have repaired one tonight as it happens! The bearing had collapsed and chewed the shaft in half, welded the end on and built up with weld, and a bit of lathe workThe other way is to use a bottom roller drum made of strips so that there are holes in between that allows the soil to drop through and have air blasting through the centre to blast it out a little like this, but more open and with with open hubs that are also formed by strips, some potato conveyor are like that

Was that at ALCAN, I worked there for a short time many moons ago, they also had some long ones at the Big E (I also worked there for a while for Balfours}We had a conveyor that was over a mile long that actually tracked round a corner using 36" belt. 300hp motors on it. Might be overkill for this project though

GotchaSame county, Blenkinsopp colliery near Haltwhistle. It was a drift mine opened around the 1700s. The miners must of followed the seam making a long sweeping corner so far down. We had to convert it from tubs to belt and figure how to get the belt to go around the corner. Had to be a bit of a compromise. Ran ok with coal on and was all over the place with nothing on. Interesting ride coming out!
Not trying to be all health and safety but if the project does come off watch the drive and return rollers they are lethal. Heard of men getting dragged in and right round. A little one not going to do it but your pinkies will hurt!
You can get drive rollers that ARE the motor but instead of the shaft turning the body does, ie the roller, you actually fix the shaft solid.I guess getting one to drive the shaft with the drive drum on is the difficult bit??
That's what happened in my post #12
