It was thanks to all of your excellent advice that made the difference. I had no troubles (other than my mistakes) when I ran both sides. Richard's advice regarding tungsten length was really great as I found I was still getting sufficient shielding with a longer length and visibility was no longer a problem.

Also another question if any of you can advise. I'd like to join some fairly thick bits of metal together for decorative purposes. I butted the two pieces together with no bevel to the edges and had a go at doing a double pass to thicken up the fillet. I hit it with a hammer and it is more than strong enough for my application, but I wanted to check it's ok to do this? I hear mig would be better for this kind of thing, but I'm after a nice tidy weld. Image below:
I also had a go at joining some thick plate to some thin tubing. It's a whole new challenge working around a pipe and maintaining the angle! I also got hold of the correct tig brazing rods, and had a go at capping over the top as this is more the aesthetic look I am after.

Them fillets look lovely not sure I could do any better myself, bang on! With the tube try elevating the piece on a block so you can rest your hand on the table and get the Torch in at 45 degrees nicely then slide your hand on table. Or if the tube is short rest your hand on top of tube and go round with the torch, that is much easier.

Thank you very much everyone for all of your help and encouragement!! There is so much to learn here and I wouldn't have made it even to this basic stage without all of your guidance. It's really brilliant of all of you experts to help when this has all become second nature to you! Hopefully one day I'll become skilled enough to pass on such good advice to others.
Brad - thanks for the pipe and prop tips as I'm sure that will help. I'm starting to try and deliberately put the work pieces in awkward positions to get more comfortable with finding other methods of support, as currently my technique gets worse without the bench to rest my hand on.
