Knife sharpener ?

Got some new kitchen knives a while ago, and they are losing their keen edge. Wondering what the best type of toy, er sharpener to go for, are the carbide insert ones any good or do I go for the sharpening stone type ?

Carbide ones will cut the knife back if its severley damaged but not good for general sharpening.

As a chef we would use the base of a mug upside down, on the rough unglazed ceramic.

The ceramic sharpeners are ok if your not good holding the angle free hand.

I use a steel on my kitchen knives, though I'm definitely not a chef!

I found a diamond “steel” in Homesense going cheap some years ago & use that. Keeps the wife happy, hates blunt knives.

Best knife sharpener I have ever used is my bench mounted hand cranked grinder. You can pick them up for next to nothing.

The ‘buy once, cry once’ option: Tormek.

I do a lot of home butchery and also woodwork, and have been through various sharpening systems. The Tormek grinds at an accurate angle, doesn’t draw temper and gets everything wicked sharp, with a lasting edge that can be tickled up on the steel.

There are cheaper copies out there (Record?) which are probably fine too.

Tormek for resharpening, steel for maintenance

I bought a Lansky kit a few years back. Takes a while first time you do them, depending on the condition. I usually wait until her indoors needs a few doing at the same time then do them as a batch, in the garage in about 1/2 hr with the radio on

I use a Lidl sharpener - a four-sided block with different grades on each face. Works a treat, although I've not see them in the Middle Aisle of Everything for ages.

If the knives are just needing maintenance use a steel.
If the edge of any of my knives are really bad, I’ll redo the edge with a Lansky sharpener but I finish them off on a stone. The stone takes practice and patience if you’ve never used one before. Stay clear of the blade tech type sharpeners, they remove a lot of material.

I tried some modern sharpeners with mixed success. I now use an old fashioned whetstone.

I do the "scary sharp" thing with several grits of emery on a piece of glass, by the time you've got to 1500 grit they're really quite sharp... More important, *no glass or marble chopping boards*!!!

Somehow I got the idea and bought old serrated original forged knives in Japan. Spent many hours to develop a confident skill and practice sharpening on water stones. Now I give these knives to my wife only on holidays.

The best solution for everyday knives in the kitchen, IMHO, is sharpening with honing steel bar.
All kinds of “lazy sharpeners” made of ceramic rollers or v-shaped carbide plates kill the geometry of the blade.

It's a ceramic roller type, but works well. Flipping the "protective" lid up allows the knife to be sharpened in two orientations, thus sharpening the blade symmetrically.

I bought this in Lidl probably 10 years ago and it still gets knives razor sharp with just a few strokes.
