Knife sharpener ?

Got some new kitchen knives a while ago, and they are losing their keen edge. Wondering what the best type of toy, er sharpener to go for, are the carbide insert ones any good or do I go for the sharpening stone type ?

I've got a set of (relatively decent) Ikea knives plus a pair of Damascus 67 layer knives that I love.

I just use a honing steel on them - nothing more complex

I hasten to add, apart from the first one, I bought the Nirey and the Chefs Choice from eBay second hand.

Various grades of wet stone, depending on the quality of the knife depends on the grade of wet stone. The good European knives I finish on 1000 grade the Japanese knives I finish on 6000 grade. European knives are finished at a steeper angle and easier to sharpen the Japanese knives have a shallow edge angle and takes a lot of practice to get right, but when you do they are SHARP !!!. The very fine steel I use to Keen the edge after use and it also keeps the blade straight. You might of guessed I'm a bit OCD on sharpening things, just spent the last two and half hours sharpening chainsaw chains and hatchets.
