I wouldn't think that there would be that much modification needed, if any.
Having had a quick scan over the wiring diagram you posted (middle diagram shows the control side), the timers are only switching the contactors, so any timer with two sets of changeover contacts should work.
The only change needed might be how the timer is triggered to start/reset.
If you want a cheaper option, have a look at Omron H3CR-A

As @m_c says, you shouldn’t have to change much, if anything, if you are simply replacing the timers. Even if your timers are obsolete I’d be surprised if you couldn’t get like for like replacements, in terms of functionality, the only change might be terminal layout.
If you are planning on redoing the whole panel from scratch you have a few more options, but you could achieve what you want with 2 relays and 2 on delay timers.

Have you tried Radwell? They offer repairs too. A bit expensive sometimes but I've used them a few times.

One of my neighbours owns a high end, artisan bakery. If you're really stuck I could ask him who does his repairs etc.

Radwell have always seemed expensive when I've been looking for obsolete stuff and they only offer about 5% of the value if you want to sell them stuff.

I'm not sure they would be mechanical, although they have a dial on them. I think it's just a visual aid to setting but I'm pretty sure they would be electronic. I've used mechanical timers but they were REALLY old!
A pic of the back/side with existing part number would confirm, and I'm 100% certain you can get an equivalent off the shelf unit. Timers haven't changed much in the 30 years I've been doing the job, they've got more fancy and you can get little ones that have loads of selectable functions, but you can still get simple single function timers. They all have a supply, relay output and quite often a trigger input (Sometimes the supply is the trigger so not always a given). But there's really not much to them.
The timer from the new unit seems to do both functions, but the original ones look to be just single timers.

The only mechanical ones I’ve seen were as old as the ark! Those look positively modern compared

I think mechanical or electrical the principle hasn’t really changed, just energising a relay at the right time
