Very interesting! Have had a look at wyns, very nice too.

A two stage pump would make sense, looking at the pipework.

Do you think the unloader would have originally been connected to the canister in between the cylinders? If it does, how would that unload the 2nd cylinder?

Ill try and grab some closer pics of these bits tomorrow, very interesting.

Whats the thinking behind a 2 stage pump, just to achieve higher pressures?

Are the cylinders different diameters? If so it will be a two-stage. Yes, you get higher pressure with a 2-stage.

Does the copper coil come off the top of the 2nd cylinder? If so it will be an aftercooler.

If there is (was) an unloading valve it would be connected after the 2nd cylinder but to or before the non-return valve into the tank.

Its two stage.
The chamber between the cylinders is there to smooth out the pulses of air from the cylinders..
The coils of pipe act as a air cooler either cooling the air between stages and/or between cylinders and storage tank.
HPC's either had a air operated unloader or a pressure switch. The air operated unloader was connected to the storage tank and operated small actuating rods that held the intake valve open(these rods were in housings mounted on the cylinder heads). As these parts are not on your machine it looks like it was pressure switch controlled.
Check to see if there is a non return valve if there is fit a pressure switch.

You can see here the out from the 2nd stage.

the pipe leaves the head and then coils round twice, in the loops you can see just smaller than the fan/pulley. There doesn't appear to be a non return valve anywhere, or any previous fitting of one.

What does the little spout off the bottom of the 'canister' in the middle do? Water drain?

Thanks for all the help so far, has really helped me get my head around it all! Ive only ever played with little diddy aldi style compressors before now.
