This is a long shot, but you just ever know on here.

Does anyone know a good place I can buy a cylinder of kebab meat online? I love a doner kebab, but we live too far out to get one delivered, and it’s not really worth the trek in and out.

I’ve had some success making my own, even using the transglutaminase meat glue, and the flavour is right but I can’t quite get the texture.

So, the plan is to buy a big cylinder, cut into sections and freeze. I’m sure I can rig up a rotator/grill thing with some microwave/toaster parts.

It tasted amazing, from what I remember but she only did it the once. I’ll see if she still has the recipe somewhere. It was wrapped in foil and cooked for about 4 hours.

It tasted amazing, from what I remember but she only did it the once. I’ll see if she still has the recipe somewhere. It was wrapped in foil and cooked for about 4 hours.

Yes, my recipe is from a book called Food DIY, where you make up the spiced mince, add in the meat glue, then cook as a terrine, wrapped in cling film, in a water bath, in the oven. Flavour is nice, but it’s more like a meat loaf, and you can’t get those lovely ribbons cut.

We used a potato peeler, worked great but I guess it depends on texture.

It’s actually an enzyme called transglutaminase. You break it down and digest it like any other protein.
