Why do people use higher pressure on oxy propane ?

from a safety point of view you must always have a balanced flame, this is really easy to achieve in 3 simple steps
1- maretial thickness being cut
2-nozzle required for that material thickness
3-working pressure required for that nozzle size

You only open the torch valves up as much as you need whatever the pressure is set to at the regulator.

The problem is that if there's no valve on the cutting lever what comes out depends on the pressure set. Also, not paying attention to your gas pressures increases the risk of flashback dramatically and if you do get a flashback having the pressures wound right up increases the hazard significantly too.

Ask them why the settings are so high for the 15mm thickness cuts,
When you know the settings should be lower, as per manufacture info,
It can be difficult being the 'new worker'

If you are not happy with their way of working,
Let them do the cutting,
Or !
Go elsewhere,
A little extreme I know,
But you have to be happy in your work place,
Certainly if you know you are correct in what you say

You should always set the correct working pressure according to the nozzle size at the regulators which are supposed to be precision bits of kit, the cheapo, generally poor quality torch valves of questionable origin are really only meant to be on/off controls and for very minor flame adjustment
