I also originally went with a gas bottle heater...I literally had water dripping off the roof because of all the moisture in the air.
In the end I went with 2 wall mounted bathroom heaters...they work well but my garage isn't as huge as that workshop. I'm heating 4.5mx7m (2m high). For that volume they work well enough and quite quick too....I generally use both fan heaters for startup but then switch one or both off once warm....like yours my roof isn't insulated but the walls have rock wool in them.
Whats the volume you are trying to heat?...I'm guessing even if you can take the edge off that would probably help. I didn't go with infrared as I wanted the air to be warm. I find with infrared when I'm under the light they are toasty...but anywhere else I'm back to cold...
