It's probably a leaky head gasket, blow-by or it's not warming up in this cold weather, just like a car!
Whe you compress air its humidity increases, so if there is a leak air will expand into the crankcase, cool quickly and the water will condense out and mix with the oil.
should I bother striping it, or just dump the oil out every couple of months like I have been??
Nice looking compressor it's probably the pistons rings are getting worn they have a web site and they self-service kits http://www.completecompressedair.co.uk/Compressor.Vacuum.Parts.Service.Kits.html
it can't be too bad yet if it takes a couple of months but it will only get worse
