Most moderns cars are not after flat/sticky tyres, they want as low a rolling resistance as they can get for improved mog and low road noiseFarmers have balloon tyres to spread the load over a greater surface area to prevent sinking & getting stuck - not for improved grip per se.
But a wide, flat profile, sticky compound performance tyre will offer more grip, but also increase surface and wind resistance over a skinny tyre.... and if the skinny tyre is also a harder, more durable compound, then you decrease drag further.
