Unless the units are in cm which might be a bit tight but perhaps alright for a single seater.

if you make the foot pedals slide backwards and forwards within a guide frame you can lock them into place for both of you or as they get bigger it can be adjusted to fit there size
the steering wheel set up can be slide backwards and forwards just by using drawer sliders a shelf and a pin lock device
the screen being the only piece thats on the frame or on a movable mount
