what rpm are you going to spin at as at a fast speed and your screws have no body to hold onto whilst the plastic tube will suffer from apple bashing until the screws get a grip
your going to be at risk of tube shattering
your best option is to use a wood blank inside of it or use plyboard then you have the plastic coating on the outside for easy clean off

RPM? No ideas, I'm making it up as I go along!
The screws will go into the plastic, screwed into a slightly undersized hole. Once full of SBR laden concrete, probably a strong OPC/sharp sand mix that should hold the screws.
I'm going to the pub to to think about it.

If you have two of the shafts shown in your earlier photo, you can make it work. The axle does not necessarily need to be a continuous length because the centre of the tube is concrete. You can put a short piece at each end and as long as you hold them in the right position before the concrete sets, they will never move.
If you are going the composite materials route, 25mm stainless tube might be cheaper than solid bar, and again fill with concrete.

Half a thought to use this bit of galv tube as the centre centre of the axle. Weld with a 309 rod etc. Unfortunately the stubby bits of 25mm bar still wont be long enough to pass through the side walls and into the externally mounted bearings.:

to be honest id just build it out of wood for now and get it past its test phase ( first design ) before id build it out of steel

Would the acid in the apples react with the zinc? Stripping the plating off the conduit does not matter but until it is gone, the zinc salt will mix with the pulp. Maybe a 3DP sleeve for any exposed parts of the axle.

Makes the project go faster
.I might have an old shock absorber core kicking about...think they're chrome plated. I used one for the hinges on my metal bender and worked well.
