Little steps matey....I deliberately didn't ,mention this as it simply is not required for the task in hand. In fact the calculation in question wasn't required for any of the design.

There is a fine line between teaching something that is enough to get you started and teaching the correct thing from the getgo.
If you start a tutorial by saying 'you put a dimension in this box', people will not move on from there. If you say 'you put something that works out to be a dimension into the box', you leave the door open for extending that statement in later lessons.
Think about when you learn a spreadsheet. They do not say 'put 2 in this box, put 3 in this box, work out 2+3 on your calculator and put 5 in this box'. In a spreadsheet, cell references and how to do something with one cell in another cell are absolutely fundamental concepts. They are what gives the spreadsheet its power - change one number here and the effect of the change propagates through the whole sheet.
It is the same and should be the same for 3D modelling. If you model everything on the 2, 3, 2+3 principle (because you do not know there is anything beyond that), you will waste a huge amount of time and produce fragile models.
You are right about learning too much at a time. Right now, we have gone from zero to sketch, extruded, pocketed and filleted in about three posts. It would be possible to spend more than three posts just teaching how to dimension a simple rectangular sketch correctly, in a way that will provide a solid foundation for your whole future.
I am with you on that one.
In my case ( and my guess in the OP's case.) We would be happy with enough info/tuition to be able to model the same thing a few times. Using the same info to make a few more models on the same principle.
As I have said in other places ( and possibly here) my personal issue is adding sketches to a model drawn with a sketch that needs parts adding.
I just can't do it.....my sketches often end up floating in mid air.

That's why I didn't elaborate - it's just not something that matters for the job in hand (but someone asked...). It's not necessarily "better", just another option that exists.
3D CAD is more complex than something like a Spreadsheet, because it involves multiple stages and multiple possible approaches to get to the end result. I defy anyone to learn every aspect of every option that exists in something like F360 - don't try and learn it in a 'layer by layer' manner.
Think of learning to use it like finding a path through a deep, dark forest: You could explore every tree on one edge of the forest, and then the 2nd ones in, etc. until you reach the other side and know the whole forest (might take a while, though, and you might get bored and give up). On the other hand, you could follow a path through the forest, ignoring the murky depths to either side, and get to the other side quite quickly. Once you're familiar with that path, you can branch off and find out what lies just off the edges of the path, and when you're confident with that, start exploring some of the other tracks you see leading off it.
My advice is to find a way (any way) through it to an end product so that you can see how it "works" then worry about fleshing out the details.

You click the sketch Icon then choose a plane to draw the sketch on, if it is to be on the model then click the face on the model you want it to be on.......
As I have said in other places ( and possibly here) my personal issue is adding sketches to a model drawn with a sketch that needs parts adding.

AutoCAD.....draw a shape, EXTRUDE (the only command you'll ever need
). Add/subtract other shapes. The End.
Watching over my lad's shoulder as he uses Fusion I'll often say that in AutoCAD you would do such and such like so.
He pretty often says Fusion doesn't work the same way.

I managed to get time to watch a couple more videos after getting part way through the udemy tutorial.
They said the same as you just said.
But I know when I try it all goes ape.
I think I finally get it (I hope) . You cant/shouldn't sketch on a model unless it's flat so you can can't add a sketch after switching to home view.

By sensible I was using the logic that Fusion is not intuitive and Auto cad does not work the same it might work how I expect. Lol

DraftSight much the same function wise at about £500 a year.
Was a time 2D DraftSight was a true clone of AutoCAD. Over time they've diverged a bit.
However..... AutoCAD throws a hissy fit trying to edit models drawn in DraftSight.

Ok you will see I choose tangent plane and then select the curved surface. I then choose sketch, choose the new plane and then sketch on it. I again use the Q shortcut to extrude. Then you will see it has only cut a very tiny slit in the curve as the face so if I wanted to cut the curved face as well I could go back in and double click the extrude in the timeline and choose two sided .

The second method of creating the gear shift bezel is to use the sweep function - essentially extruding a profile along a path. For things to work properly, the profile to be sweeped need to be positioned on and perpendicular to the path (a bit like a racing car on a circuit - it needs to be on the circuit and pointing in the right direction. We can use the trapezium sketch but it's going to be easier if the centre is positioned on the origin rather than the bottom left corner. So we delete the coincidence constraint locking bottom left corner to the origin, to do this click the point sketch point in the lower left to show the 2 coincidence constraints , 1 is to force the ends of the two line to be coincidence, the other is to make the point coincident with the origin (this is the one we want to delete). It's the one where the lines remain black when hovering over. Delete it and the trapeziums can now be moved - note they've turned blue since they are no longer fully constrained (can be moved). To make the mid point of the outer trapezium construction line coincident with the origin; click the coincidence constraint, hold shift (selects mid point of lines) and click one the mid point of the construction line then click the origin - note the sketch is no once more fully constrained
Now the sketch is positioned at the origin we can sketch the profile on the RIGHT plane using spline for the curve and a couple of straight lines for to close it to form a profile - note it only needs to be wide enough for the gear bexel since we'll be cutting the centre out. We can now sweep this along the outer trapezium - that's OK but the corners have no radius - it's only going to work if we radius the corners in the sketch.
We can then cut out the centre trapezium and shell as before:
