Could use a trim bit and rout the edge flush...personally I'd leave it a few months for it to find it's natural position.
My mate calls those banana timbers "boat wood" ...a well known DIY store seems to specialise in the stuff!

i think (can't be sure) that I might have been able to get rid of some of the massive banana curvature.
I'll have a think about what to do regards railing and yes, it will probably be something trick because why not.
