That's because he had created a duplicate sketch to extrude the inner, but positioned this on top of the extruded outline, then extruded it outward even further (so it sat on top of the outline) and then tried to fix it by moving the inner body down so that it was below the level of the outline - this left a void under the central body. Had he just 'un-hidden' the original sketch after the first extrude, he could have used the same sketch to extrude the centre which would automatically have started flush with the back of the outline. (Anyway...)In the example I downloaded, the fill was total and I had to EDIT FEATURE to take it down to a 3mm base.
Also, there's no need to create offset planes for text on a flat face - just draw the text into a sketch on the face itself, and then either extrude it outwards, or deboss it, etc. as you see fit.
Incidentally, the choice of font in the Fusion file may be a problem if it is to be 3D printed above the surface as there are a lot of very thin decorations:
