Well i have a fixed steady and a traveling steady a verticle mill plate and a horizontal slotted plate I need to find a smaller chuck key for the 2 smaller chucks too

Catchplate is used to drive drive dogs.
When turning between centers it's used to transfer the power from spindle to part

The catch plate is used when turning between centres. You mount a stud in the slot which then provides drive to the part via a lathe dog. The boring table replaces the cross slide and is used for line boring. Worth £150-200. I sold a spare to someone in Australia for £175.

How do the work.drives come out once the jaws are out

There were none just the 4 bolts and the back plate come off

Looks like the plugs have to be punched out i shall clean it as it is I think

Right,

1.) Reference the part with a centre punch. Put a dot on the back plate and chuck so you know where they line up.
2.) Undo the 4 bolts on the front of the chuck. The backplate will need to be prised apart with a small lever.
3.) There are 4 bolts, one for each jaw. Remove those.
4.) A round cam/pin should now be able to wiggle out.
5.) The screws for the jaws will now fall out

The plain section on each screw is how it is retained in the body. There's a dowel with a concave end that locates around the plain section.
