The OM366 like a lot of Merc engines of that ere are direct injection and don't require glow plugs. They are a fantastic bit of kit.
C1
C1 gives you 7500kg on a ridged vehicle & a 750kg trailer.
It does not give you 8250kg split as you like between units.
C1+E gives you 8250kg split between units on a pre 97 or 1200kg on a post 97. However like you said the trailer cant weigh more than the vehicle.
You need C+E.
You cant have over run brakes on a trailer of over 3500kg. Some landrovers can tow 4000kg if trailer has active brakes.

If it came out of the factory or from a conversion company that has tested & plated it to under 3500kg MAM & with an under 8250kg GTW then it should / could be ok on a pre 97 licence.
As yours is a DIY conversion you will have to look at what it is plated at already. I am also not sure what affect the 5th wheel will have on the licence needed.
If it was me I would want a C+E to be 100% sure I was ok.
Re your non 107 licence there was a short time when the new regs came in that you could apply to get the 107 lifted if you had been using your licence for driving a vehicle over the 8250kg limit. I think it was the first year.
I would not want to drive one of those mini artics on a post 97 B+E unless both units were under 3500kg each & a GTW of 7000kg or less.
thats typical of insurers, was it ever foundI wasn't arguing, Donny VOSA station tested it the first time, the tester made 3 40t move to let me on, I even swapped lanes half way down. The following yr, I got a right jobs worth, refused to test it so I rang Beverly Staion up, and they tested it.
It wasn't a problem the following year as some toe rag nicked it. I was £33k out of pocket because of the insurance agent hadn't informed the underwriters on the conversion

C1 and C seem very simalar, how do you add e?, so a C license is like the old hgv 2 up to 18 tons ?
and what i use to tow with at the moment has been a fifth wheel since new, registered on the v5 as a motor tractor but its 6.5 tons gross

Category C1+E
You can drive C1 category vehicles with a trailer over 750kg, but the trailer - when fully loaded - can’t weigh more than the vehicle.
The combined weight of both can’t exceed 12,000kg.

Category C
You can drive vehicles over 3,500kg (with a trailer up to 750kg).
Category C+E
